    Currently, when I am trying to Customize the Appearance of the Blog Post Meta (eliminate the author) it is not being reflected in the site.

    You need to modify the theme from the theme options page and not from customizer.

    I followed your direction and went to the theme options page and see that the post author is not clicked so the author should not be showing up on the site, which it is, unfortunately.
